Default H1-B Unpaid Vacation

I am currently in my 3rd year of my H1-B and it has just been re-
approved until 2009. But I want to take an extended leave of absence,
to travel. Based on my current employer allowing this to happen. How
long am I allowed to leave the usa for and what documentation would I
need?

You can leave the USA for as long as you like, though if you want to
re-enter as an H-1B you'll have to do so before the approval runs out
in 2009. You'll need an H-1B visa to get back in again

You can leave the USA for as long as you like, though if you want to

in 2009. You'll need an H-1B visa to get back in again
...and if you're going for a while, it may be worth taking a letter from your employer saying that they approve of your absence and still have a job to go back to.
