My I130/I485 GC interview is scheduled for April 9th.

We have the list of paperwork etc which we should take to establish our bona fides as a
married couple.

My question is - do the INS retain any of the evidence that we take ? I am thinking of tax
papers etc.

The INS may or may not retain any document which you present. You should be prepared with
extra photocopies, if you do not want to give up the documents.
