F1 Student visas and one-way tickets

I'm from the UK, and I'm studying in the US on an F1 student visa.
I'd like to go back home in May for a week to see my family, and my flight ticket TO
the UK is accounted for. (I flew out here on a return ticket).
Now what about my flight from the UK back to the US at the end of my holiday: Can I
purchase a one-way ticket, or does it have to be a return?
My course doesn't end until June next year, but will likely go on for longer, as I'll
be doing an internship in the fall (autumn), meaning that I'll get less classes done
that semseter. If I purchase a two-way ticket, and use the outgoing portion of that
to travel UK-US in May, I HAVE to use the return portion of that ticket within a
year, and if I don't the ticket is wasted. Like I said my course doesn't end until at
least June.
I know that for tourist visas, you have to produce a return ticket before
entering the US.
Any help would be appreciated.

Just get a return ticket - the price does not vary much more than the single.

Actually that's not true - a one-way is about half the price of a return, and a
flexible-return is only valid for one year. I may not end up going back home for a
year or longer, in which case it would be quite a waste.
