Another (unclear) AoS question
Meh, I think I know the answer to this already, but I'll ask in any case
just to be doubly sure: for a K1 applying for AoS after marriage, are the
I485 and accompanying documents submitted to the service center (Texas,
in my case) or the field office handling it? The reason I'm asking for
clarification is simply that the paperwork we received seem to indicate
that it goes to the service center (or more specifically, to a particular
postal address, presumably departmental), but then I also know that the
interview takes place at the field office... and I485's appear to be
processed at both field offices and service centres, depending on on what
basis the I485 is being submitted?
My presumption at the moment is that it's sent to the service centre and
then subsequently forwarded by them to the relevant field office, but any
clarification would be appreciated.

You apply to the local INS office UNLESS you are Baltimore. I think
Baltimore uses VSC instead, but last I heard they were the only office
that used this protocol. All others use local INS office.
