On the list of things to bring, they ask for the spouse's passport, now I'm going to
assume that by spouse they mean the immigrant, right? Now by the off chance it means
the USC, what if they don't have a passport? TIA, mary

If you, the USC have no need for a passport, then I would not worry about
it. It's the immigrant they are talking about, they want it so they may issue the
stamp at the interview.

The USC must take photo ID to the AOS interview.
It does not have to be a passport., adriver's
licence will do.
The spouse must take their passport and
their I-94. The I-94 is proof you haven't
violated your status by leaving and the
passport is needed to be stamped.

spouse's passport would mean the foreign spouse's passport. If the USC has one bring
it, if not then bring your US birth certificate, preferably the long form.
