Nothing. I eat fries plain. But I admit to being a picky picky eater food wise, and use no dips or sauces for anything.

Further seasoned with salt, pepper and a little ketchup.

Salt and vinegar 100% of the time for sure, supplemented by tomato ketchup ( red sauce) 95% of the time. Just about the only time the red sauce won't appear is if they are being consumed out of a paper tray at the seaside, which is a shame, because then they will also be covered in scraps, and we all know that scraps and ketchup are a match made in heaven.....!
Just got back from dinner in Hiroshima......the kids were fascinated by a Japanese chap a couple of tables away whose dinner seemed to consist of a plate of home made, English style chips, which he proceeded to eat very delicately with chopsticks. He had a precise, rather bizarre routine which consisted of firstly dipping his chopsticks in his beer (Asahi Superdry), then picking up a chip and dipping it in his beer, and then in a saucer of ketchup before eating it. After swallowing, he took a sip of beer, then the whole routine started again. He was so precise and consistent, it was like watching a programmed robot, and he timed it perfectly so the last chip was followed by the last drop of beer. I gotta say, I love this country......it has to have the best "people watching" in the world

Use white vinegar, if it is available (usually not) or ketchup or sometimes just plain if they are really crispy.
