Much in the way of extradition is speculation at this point.
I've already provided the link to a copy of the treaty.
I agree that "double jeopardy" does not expressly apply in this case.
Do note that the case will have to go to a magistrate and then the magistrate's order is subject to habeas corpus review, and then circuit court of appeals.
Much in the way of US extradition law involves non-US citizens. I can envision Ms. Knox vigorously contesting extradition and there is a rubric of "bad facts make bad law" -- and that rubric may apply here.
I don't find the facts of the alibi to be weird at all -- it is almost a tradition for young American women to go to France or Italy and have a torrid sexual affair with a handsome Frenchman or Italian. I know of several 60 something women who speak wistfully of that time in their lives.

She chose the University of Perugia, in Italy of course, in which to spend a year studying Italian, modern Italian history and Italian politics
Very adept in karate, which she followed since age 17 - she was very petite in stature so her interest in karate is understood.
She worked hard as a barmaid to support herself through university
Her ambition following graduation was to work for the European Union Commission in the field of journalism.
Fellow students found Meredith to be very caring, extremely intelligent, very witty with a good sense of humour - and universally popular and well liked all round...sounds like a really lovely girl.
Physically she was very attractive......in the opinions of many - more so than her supposed friend - the American Amanda Knox.
From all of the photographs I have seen of both the poor ill fated Meredith and the now very controversial Amanda Knox - I would very much agree with that.
Make what you will out of that.
Many people here in the UK believe that Knox really and truly was playing to the camera big time during that US TV interview with that female journalist holding her hand so very "reassuringly sympathetically" throughout, with tears dead on cue.

If federal courts decide she can't be extradited, not sure the government can do much.
Its not soley in the hands of the State Department.

From what I have read the Administration is not worried, they will be long gone before it becomes an issue.
