We have cunningly misplaced the letter instructing us to file for removal of conditions on my permanent residency. Don't worry, it's still in the house in the massive pile of papers on the desk, but while I'm waiting to find it...
The correct form is I-751, Petition to Remove Conditions on Residence, correct? This one: http://www.uscis.gov/files/form/I-751.pdf

Similar theme, so I'll just stick my question on here. I have my 1 yr extention letter from filing to remove conditions, and have done my biometrics etc.
My 2 year greencard expires in a few days, should I also carry my extention letter now or is it not necessary?

For international travel, carry the original extension letter plus your green card.

My 90 days are up Feb 8th but I wasn't sure whether or not I needed to actually be in the USA when it got filed, so I've waited until we were back from our trip to the UK.
Filling everything out today; sending it off tomorrow (after I've found the sodding letter!)

Bit confused now... do I include my son in part 5? It says to list all your children, but as he's already a citizen and not applying for the removal of conditions, do I list him? 
I would assume I do and put CITIZEN in the immigration status box, correct?
