One of the things I always mean to master is "millionaire's shortbread". i'm sure it's not as tricky as I think it is. Caramel poured over the shortbread, cooled, then a layer of melted chocolate on top of that. My local bakery in Scotland made this and it was heavenly.

It says 9 squares from an 8" tin, but I usually do it in a 9" tin and cut into 16 or 20 squares.
