One of the things I always mean to master is "millionaire's shortbread". i'm sure it's not as tricky as I think it is. Caramel poured over the shortbread, cooled, then a layer of melted chocolate on top of that. My local bakery in Scotland made this and it was heavenly.

Best freaking ever millionaire's shortbread recipe, and so easy to make - BBC Food - Recipes - Salted caramel millionaire’s shortbread

It says 9 squares from an 8" tin, but I usually do it in a 9" tin and cut into 16 or 20 squares.

It's sold every where these days, but it's usually pretty expensive.

Ocean State, have it for cheap though and World Market, aren't to badly priced.
