My wife is vegetarian, I cook for her most nights and eat meat when we go out.

I could live without meat though.

She says "Dont just eat around the meat" By that I mean if you're having meat and two veg dont just give them the two veg, I'm sure you don't, I've not read all the thread. But as has been mentioned, google is your friend.

I've been vegetarian since the age of 14 and it's never been a problem other than a growth spurt at 17 when I needed iron supplements for a while. I find eating a veggie diet in the USA is pretty simple as long as you're more experimental with your foods than most. Tofu, for example, has a bad rep but it's delicious if cooked properly. I especially love the firm kind (fnarr, fnarr) gently stir-fried and eaten with chillis, garlic and a bit of salt. Serve it with rice or go crazy and add coconut milk and it's tip-top delicious.

I also make a mean fake-chicken and bean enchilada and a roaring fake-mince shepherd's pie. A baked potato is a simple but great veggie dish and I'm learning how to improve my veggie lasagna-making skills. Your daughters will really benefit from learning about cooking and making healthy choices as vegetarians, so hopefully they'll be just fine as impoverished students as well. I certainly was.

It can be done!

I'm not a vegetarian, but when I go for a thai, I always order Tofu and you are right, it is delicious when added to a hot spicy coconut sauce.
I really like Chickpeas which are packed with protein and are a good source of fibre. They are great in soups and curries.

Not because it has meat in it, I just think mixing frozen bacon with sugar and cream sounds AWFUL.

Made a curry with chickpeas last week - it was great, only let down on the veggie side by the inclusion of chicken

Edit to add: I bought some chana dal today, supposedly like chick peas, that should be a decent alternative too
