I know a local steak restaurant that includes a guide to cooking steaks/ what to expect when you order a steak - what each step from "rare" to "well done" means. "Medium-well" is described as "overcooked", and "Well done" is described as "basically ruined".

Underneath that guide the menu says that the restaurant will accept no responsibility for steaks cooked any more than "medium".

Because it isn't blood. It's water and myoglobin, an iron-binding molecule found in muscle tissue.

One would eat a steak rare because it's just better.

I'm sure a good chef, with a good cut of meat can make a medium-well done steak taste good, but it certainly isn't my preference.

I used to always have my steaks well done, but now, a well done steak has the texture of old leather. It's way to dry. That said, I need a medium steak. Anything less, it's going back. My missus has her steaks rare, my father in law has em virtually blue. I've lost count the amount of times my wife has cooked me a steak and I've had to chuck it back at her to give it another couple of minutes.
