Underneath that guide the menu says that the restaurant will accept no responsibility for steaks cooked any more than "medium".

Nope, I like mine medium rare. One kidlet tells the waiter, if it is still mooing, it is done.

A rare steak has the taste and texture of steak, not the taste of a cheap, overcooked beefburger and the texture of an old boot.

I'm sure a good chef, with a good cut of meat can make a medium-well done steak taste good, but it certainly isn't my preference.

I used to always have my steaks well done, but now, a well done steak has the texture of old leather. It's way to dry. That said, I need a medium steak. Anything less, it's going back. My missus has her steaks rare, my father in law has em virtually blue. I've lost count the amount of times my wife has cooked me a steak and I've had to chuck it back at her to give it another couple of minutes.
