Er, this is entirely by design. The unvaccinated have no other choice but to avoid Spain. Vaccinated people aren't avoiding Spain.
Any problems with teenagers only having one shot or being unable to prove their vaccination status is entirely down to the UK government, which for some reason has messed up the 12-17 age range.

I’ve seen posts regarding brits in their thousands cancelling holidays to Spain but holiday prices do not seem to be coming down, prices seem really expensive this year.

So? I thought the UK had the best vaccine roll-out programme in the whole wide world and the best booster programme in the whole wide world, according to the PM. It can't be a problem, surely?

In England, you need to wait for your booster at least 4 weeks after having had a positive Covid result, and you can enter Spain 2 weeks after.

He has lied and treated the British people like fools.
Any hoops you refer to that UK citizens have to jump through are entirely self-imposed, so a bit pointless blaming the Spanish for wanting to protect its citizens.

What I am "sick of", and I suspect that most people are, are the people who want to argue about the hoops (usually on the basis of something they read on-line) and seem to think that they're special enough to not follow the simple health guidelines that will protect them from serious illness and minimize the risk of spreading the virus to others.

The only people I can see Spain's rule impacting are those that have a child who has turned 12 in the past couple of months, who simply hasn't had time to be double jabbed.

The hoops are mildly annoying - wear a mask, get a series of three (to date) jabs, be prepared to show your vaccine record to enter certain buildings or engage in certain activities, but are hardly life-changing.
