I've known Brits who've run bars/Irish pubs successfully in Spain, but in big cities like Valencia and Madrid - which means they are busy most of the year but closed in August. They also tend to have a Spanish partner, which helps with local laws and traditions. Running a bar in a coastal tourist place puts you under stress straight away as you'll get no custom for x months of the year. And in either case the warning above (that you'll have long hours seven days a week) is spot on, although a lot of establishments choose to close one day a week. Given that many pubs/cafes have closed in the UK in the last few years, I can't see it being any easier in Spain. But if you're determined to go ahead, I think the best investment is to approach an owner of a successful cafe-bar, and pay them for a couple hours consultancy.
Yes going for a large city seems to be a safer bet than some of the more trouisty / seasonal areas...
Yes sure speaking to a bar owner for a few hours you could get the heads up on many issues. But I would go with missile that getting a job in a bar and learning the ropes is the best way to go, before even contemplating buying a bar...
As for having a Spanish misses is a deal breaker on having a bar in Spain.
To the OP, you'll have to find a Spanish misses and dump the existing one, so you'll have someone by your side who can dig through the never ending Spanish red tape that you are going to be confronted with.

Quite a few of the 'Irish bars' have struggled with some of them closing.
Yes going for a large city seems to be a safer bet than some of the more trouisty / seasonal areas...

Too much is made of the "red tape" issue. You bypass most of it by hiring a decent gestor (same as you'd hire an accountant back home). Better to concentrate on income and paying the bills - that will be of enough concern. However, make sure you are aware of laws that apply to your business and that you abide by them. For example, fail to abide by noise restrictions in your area, and you could be landed with a 10k fine!
