opportunity
I have the chance to live and work in Spain, we have a young child only 18 months and to be honest do not have much to stay in the UK for, salary offered seems good and its a permanent job. Crazy to risk it?

No, not crazy at all. If you have a decent job offer I'd not think twice, even - or maybe especially - with a child. Depending where you go, Spain offers a fantastic open air lifestyle; if you're earning legally and paying in to the system you'll get good healthcare and be building up a decent pension (although of course that can never be guaranteed). So long as you don't limit yourselves to an expat lifestyle, your child will grow up bilingual.
I loved my time in Spain, would do it all again and will more than likely end up there again.

There are only two possibilities that make a move to Spain a real possibility of success in my view. Retired with a pension income and the other is with a firm, legal, job. Go for it, the child will by straight into the state system and will be Spanish in a week.

We have very little information to go on . . . except the salary is "good" and the job "permanent."
We don't know why the UK is unfavourable for you either.
Therefore, I would advise you do a SWOT analysis over the next few months (or perhaps even now?).
If you decide to move to Spain:-
1. What are the strengths?
2. What are the weaknesses?
3. Are there opportunities?
4. What are the threats?
Then do the same with your UK situation. You will get your answer fairly fast.
