They will use email if you buy something online from outside the EU and the website uses IOSS but the checkout cost doesn't include VAT and they give your email address as the contact. Also if you claim a tracking number as belonging to you in correosaduanas.es (previously known as adtpostales.com).

If you agree to receive notifications from them electronically they mention that you need a digital signature to access them. This is to confirm receipt as it is then binding from a legal perspective (the letter will often give you deadlines from the day it is received).

So I get a message that there is a secure notification that I can collect electronically... even though I never ticked that box and should receive it by regular post.

Turns out these docs are sent in batches, so although the letter is from last month it can take 7+ business days before it reaches you. So from the "pre-admission" stage to the "it's in the logistics centre" and finally "delivered" stage you could be looking at 10+ days including weekends.

Delivery is very quick once Correos actually get their hands on the letter.
