Default non EU spouse residency

Hello,
I'm moving to Spain with my American husband in a few weeks. We are trying to get everything together to apply for his non EU spouse residency card.
We have read that the first step we need to do if to register our marriage (we were married in the USA) in the EU country I am from (UK). It seems however that this is not possible in the UK.
Has anyone applied for this type of residency before? What did you do?

Also, any advice on what documents are needed would be greatly appreciated! The consulate are being quite unhelpful

Believe it is actually easier to get residency for OH in Spain than in the UK (if you are British) as Euro human right laws apply (and the visa is free) but you do have to become a resident in Spain first to do it (being American a visit visa should be easy if even needed). I think your marriage certificate from the States is recognized in the UK but probably needs an official translation for Spain.

Spain is tightening up residency requirements for other Euro nationalities so you need to show assets/income (see other threads) although they can not stop you coming for up to 90 days at a time.
