Jamon storage
I purchased a jamon in Ayamonte this week and have brought it back to the UK for my daughter's birthday celebrations at the end of this month. It was wrapped in some grease proof type paper and it's stocking. Should I unwrap it until the 30th or leave it wrapped in a cool place? My friend has the stand and knife so we are ready to go but I don't want to make it too hot and sweaty!! I welcome your expert suggestions .

Here in Chiclana, all the ventas have them hanging in the bars - they seem to only sell them at Christmas! But they are covered in a fat which drips into a cup that hangs under them. When they actually cut one the first thing they do is to cut the fat off - the exposed jamon is then covered with a damp cloth That´s the sum total of my knowledge Davexf |

'How to store jamon serano in England' bluebottles will be you worst problem. Food must not be exposed in England. Extra muslin to make sure it has air but no flies. Like the old meat safe. A cabinet with gauze sides. Plenty of air no flies.

All eaten up now it was delicious with lots of requests to bring more back to the UK. That means I need a bigger golf carry bag!

Can you give us a tip as to where you bought it and how much you paid?? Was it Bellota?

You're right Olivian. Bluebottles and fresh air are the bain of the uk. Better wash it down with some gin and hide in a meat safe. However you could leave it in Ayamonte in the open and just enjoy eating the flies.
