Having just watched the excellent Blood And Gold: The Making Of Spain With Simon Sebag Montefiore - I was wondering are there any other good documentaries either in English or with English Subs.

There's also the Michael Portillo documentary "Portillo Goes Wild in Spain", which is a BBC Natural World programme.
