Most of the Ibis chain of hotels accept dogs for a small fee.
We use the ibis at Chartres ouest luce or the ibis at poitiers-sud in France & the ibis Irun or ibis Salamanca in Spain on our trips to and from Seville with our dog.

gives you a choice of Western or Eastern dependent on where you want to end up or where you want to pass through.
both my times were the Western route, first turned south after crossing the border and second time drove to Santander before turning south
most roads are good quality without having to pay the extra for tolls and you can maintain a good steady speed as villages have now been by-passed.
have found that Spanish motorway places will allow a dog or two overnight so long as you bring them in the back way and not thru the resto.
