There is more than one Camino route to SdC.
From my experience of those that walk they generally like to get up very early for a number of reasons. They rush to avoid the midday heat, to obtain their accommodation. They like not to spend money on frivolous things. English breakfast would be one of them
If you look on an internet map you will see where Monforte is located.

Still not heard from the OP.Looks like they have vanished.

Mmmm its a bit off the actual Camino, but there's an increasing move apparently towards guided trips for people such as those who have money to splash around (those who transport their luggage, not for health reasons but just cos they don't fancy carrying it). Some tour guides are starting to offer "off-Camino" trips, and there are those who are searching for a bit of the real Galicia having got hacked off walking into Santiago in a crowd of 2000 pilgrims upwards per day! Guided walks over there in small groups seem to be the latest thing and many of those paying top dollar wouldn't notice whether they were on the actual Camino or not!

Hopefully they will not discover your peaceful haven to huge numbers! I can't imagine what its like living between Sarria and S de C at this time of year with a non-stop stream of peregrinos on the road every single day

Stick to the Pizzas despite the huge competition everywhere, just do them better than anywhere else..The Full English is for the Brit peasants in Benidorm, not for unspoilt Northern Spain. Maybe a Full English Pizza could work! Or maybe a Pizza Fabada!
