Certainly has advantages if you get an Irish passport. Personally I'd get both, cover all bases! The Irish one does give greater rights in Europe - live and work in the EU, just for starters.

If your wife is a UK citizen, she cannot hold a visa for the UK.
From the end of February she will need to use her UK passport to enter the UK.

UK passports are currently taking around 2-3 weeks to reach applicants in Aus. Much the same as usual.
