Take the contract with you to the Mairie and also take some photos to show what a crap job they've done. The lawyers at the Mairie can sometimes write an official letter if the place is inhabitable...

Did you draw up a contract for the work to be done? In theory, the company should have insurance on the work they do. Don't pay them a cent until you find out your legal situation. You could also try...
