Certainly in fiestas like San Fermin, the first cohete, the "chupinazo" as they call it, signals the start of the festivities. In Pamplona you can see them launch it from a balcony.

I guess that's one of the trade offs of living in Spain. They've been doing it for hundreds of years, I doubt they are going to stop to appease any Brits!;) And why should they? Could be worse, you...
