First issue is visa as you'll not get one as a fiancee. Non imm "O" good for 15 months with 90 day border crossings. Get a non imm "B" if you can (Hull UK) as you'll need the "B" visa to get a work...

I'm new here but not to SE Asia or business in Thailand so I'll post an answer if you don't mind.

You are over 50 so you can get a retirement visa if you can show income of Bt65,000 or equivalent...
