Deep-fried courgette flowers are, in all seriousness, quite delicious. Esp dipped in hollandaise.... Which reminds me - anyone got any tips on how to poach an egg? Made eggs benedict the other night - the hollandaise turned out great but the poached egg was a soggy stringy disaster...

did you stir the water fast and add a drop of vinegar...this makes for the perfect poached egg...

Yes to the vinegar. I put the egg in a ladel and kind of lowered it in gently... Really, you reckon a vigorous stirring would help????

when it is boiling a lot,you need to stir it really fast to make a vortex.its easier if you crack the egg into a cup and when youve got the vortex,pour it into the middle slowly...perfect.
