Fly into HCMC, spend lots of time there.
Go to Hoi An.
Go to Hanoi, then to Ha Long Bay.

Perfect 10 day trip and one of the coolest places I've been. HCMC is hands down a fantastic city.

If the trip that i am currently looking into doesn't come to fruition then i will definitely look into going to Vietnam further:)

I have a colleague who just returned from Fiji and thought it was fantastic.

July in New Zealand depends on where you are - but yes it can be cold and miserable, and snowy farther south.

Let me throw a destination out for you to consider - the Northern Territory. It does meet most of your criteria in that there are a lot of activities and July weather is pleasant, and as an added bonus, it can also be difficult to get to as I see that is an important factor to you.

Nightlife, no, unless you fancy grubby pubs.

In any case you don't feel the cold when adventuring and being active.
