These low cost airlines all seem to be based around looking up when I would
want to fly and giving me a price.
I would like to look up when the cheap flights are, and plan my trips around
them.
Is there a way around this?

Ryanair used to have a page on their site with 'farefinder' in the address,
which did exactly this. I can't find the link any more, does anyone know if
it is still there? It was never widely advertised, it appeared in one of
their newsletters once and worked for quite some time afterwards.
http://www.skyscanner.net/ might be of use, haven't used it recently though
so I don't know what airlines it currently covers.

No, the whole concept is built around bate and switch. Same goes for
Canadian carriers like Canjet and (now bankrupt) Jetsgo. They don't
deal with travel agents (at least in the normal way) so price shopping
is a bloody hassle.
Easyjet was my favourite when in Europe in 1999. I checked it recently
and still came up with some fantastic fares. Shop till you drop is the
only way to go.

That's not true.
Although not perfect www.skyscanner.net does a decent job of displaying
prices over a date range for selected destinations and www.applefares.com
does the same and also allows you to leave the destination field blank.
There is a limit on the search that ends it if there are too many options,
but you can narrow by date, country, or choose a limited number of
destination airports in the same search. Applefares does not display Ryanair
flights, however.

Ryanair have a link on their home page 'find lowest fares' or something
like that. You put in the earliest date you want to travel and the
latest and it searches about 20 days after/before.
Easyjet have something similar.
You have to have chosen your destination, but both seem to work quite
well.

I'd love to be wrong. Unfortunately I've just been to the Easyjet
site and all I get are prices for the day before and after.

With Easyjet, first choose your route and dates and search. You'll get
a day either side as you've found.
Hit the button marked 'Calendar View' and the window wuill expand to a
week aither side of your chosen dates.
