More bakers in Belgium

Sun 25/02/07 - The number of baker's shops selling their own freshly
baked bread and cakes went up during 2006. The figures for last year
mark a break with a trend that saw an average of around 100 bakeries
close in Belgium each year since 1992.
Experts believe that the turnaround is a consequence of the buoyant
economy.

There were 3,150 baker's shops that baked all or some of their own
produce in 2006.

This is an increase of 35 on the figures for 2005.

Bruno Kuylen of the Flemish Association of Professional Bakers and
Pastry Chefs Vebic told the VRT that investing in a bakery had become
an interesting option for those wanting to start a small business.

"The reduction in the number of bakers means that those who remain
enjoy a bigger market share." Mr Kuylen added.
