ive always wanted to see greece and italy
so why not start in greece and hop over to italy
as i make my way to countries north

I have driven from Greece to the UK and came via
Igoumenitsa in Greece to Ancona in Italy using
Superfast Ferries ( www.superfast.com ). There
are several Italian destinations from Igoumenitsa
including Venice.
The one I used left Greece at mid-night and arrived
in Italy at 13:30 the following day.

There are several routes. The shortest IIRC is Igoumenitsa to Brindisi.
Depends what you mean by "best". The quality of the different lines
varies enormously. I can't advise as my info is out of date.
If you're backpacking and broke, a night on the deck is a experience
you won't forget, but bring a waterproof sleeping bag.
The night air condenses over the sea and you'll get soaking wet.

Probably not the best, but certainly the cheapest: You can take a
bus through Albania, cross to Croatia, take the bus up to Rijeka then
onto Trieste, and pick up the train in Trieste...or you can catch a
train in Zagreb that goes through Trieste and on to Venice, Milan,
etc.

Some of these ferries are covered by a Eurailpass. So if you're already
buying such a pass, it's free!
