Default Is this flight scenario possible?

6:50 PM: arrive at London Stansted airport on Iceland Express (from Reykjavik)

7:55 PM: depart London Stansted airport on Norwegian Air Shuttle (for Oslo)

So there is one hour and 5 minutes between my arrival at Stansted and my next
flight to Oslo. Would this be enough time to pick up my baggage (I assume
that I won't be able to carry on *both* backpacks with me on Iceland Express),
and then check in for my flight on Norwegian Air Shuttle?

may be,
-if your first flight is not delayed
-if the gate for the 2nd flight is not closed

with only cabin luggage, you can do-it, the Standsted arrival has no big
queues like heathrow....

tell it on the check in for the first flight that you have a short
connection

You mean when I check in at Reykjavik? How will that help me when I get to
Stansted?

Also, will I have to go thru customs or anything after getting off the Iceland
plane? (It will be a return flight from Iceland, since a week earlier I will
have flown from Stansted to Reykjavik.) How long will that take?

That sounds like a very short connection, you would be pushing it. I'm not
sure how soon before the filght the check-in closes, but it can take half an
hour for baggage to come through at times, by which time the check-in would
surely be closed. Look for another flight if possible (one or the other)
just to give yourself that extra leeway.

Dunno about the time element, but is there any reason you can't check
your baggage through from Reykjavik to Oslo, without having to pick it
up at Stansted? That would certainly save a fair amount of time in
London - maybe even enough to make an hour layover feasible.
