How does one catch the 0634 Eurostart (let alone the 05.30) to France when
the tubes don't start until around 6 am?

Some start before 6, with arrival times at Waterloo of 6 am.

How about a bus, taxi or even walking?

They like doing this sort of thing.

You could get a through ticket on it from Edinburgh. The problem
was, the ticket office didn't open until half an hour after the
train left.

Depends what you mean by cheap. But the Travel Inn at the old County Hall is
very proximate and inexpensive for that part of London. See
