One will run into andouillette partout en France, it is
a grilled tripe sausage.
As is often the case these days one will find a wikipedia
article of this strange thing, and give an explaination
of the meaning of the letter combination AAAA which is
often on the menu. AAAAA means Association amicale des amateurs
d'andouillette authentique, which I have always taken as
a joke.

if one is eating an andouillette. With doses of hot French mustard.
