We have the second appointment with SEF Castelo Branco to book for September. Last time we needed eight thousand euros per person in our bank account.
Can anyone say if this will be a requirement again ? Are there any other second appointment pitfalls I should know about ?

We topped ours back up for the SEF appointment. 9120 for the 1st applicant and 50% of that for the second. At least the exchange rate isn't as bad as it was when we had to do it.
The main two items I've read about that can cause a glitch:
1. Health insurance, some are accepted with the travel insurance, some with health insurance, a couple with the GHIC cards and we got our SNS utente numbers prior to the meeting. I've not read about anyone who has got their SNS utente having any problem with it but getting it from your centro de saude can be variable.
2. Land border entry - if the last time you entered Portugal was by air then no problem but if you came in via a land border you should have notified SEF. Many get a hard time if they have not done so and cannot provide proof of being in Portugal.
