Anyone know of any shops between Albufeira and Faro with any back bacon in stock? Loads of 'orrible streaky, but none of the real thing around Albufeira.

Ola all, Have you tried the 'orrible streaky stuff? It's great and makes fab crispy bacon! No water ever comes out of it!!!!! Not like the soggy wet stuff my visitors import! Give it a try. Would be fab cold on a chicken and bacon salad but I eat it all while hot and just cooked mmmmm

surely there must be a smoker , or an expat expert on smoking , that could give pointers on small cure houses.One thing thats plentiful is porco in the algarve , and if you have the stomach you can hunt it by joining a gun club.
I doubt it though , today its all liquid smoke ,from the tarry residue from making charcoal.Would that not make a good night , a smoking night , with a bit of tinto or sagres and a bit of music..... and then take home what you brung and/or share.I seen a program about smoked herring , the guy from conrwall that has a fish resturant , and theres very few doing even that in the uk now too. I would like to smoke ones meats , now that just sounds so wrong. Ever seen river cottage , hfw did some in his chimney brest. |
