It takes itself down, in the opposite way to how it erects itself, using the hydraulic jacking system and removing sections from underneath, rather than inserting them. Easy.

I'm just a QS. I usually count bricks. But I thought that's how it worked. Unless, of course, they leave the crane up there, and encase it in concrete.

I was told they take as much as they can with the crane thats left, then they will use a helicopter to bring the remaining bit down

No, they get it as close the ground as possible, then use a mobile crane to dismantle the jib and the rest.

You must have noticed the tower cranes that start of really close to the ground. They go up in sections, jacking up and inserting sections, and come down in reverse.
