It sounds like you guys have your own thing going, but in case you hadn't heard of it yet I really enjoyed Scuba 2000 on the east coast. It's a small operation in the town of Bidiya, about halfway between Dibba and Fujeirah.
My wife and I did our PADI Open Water there in April, and it was awesome. It's a great way to combine diving with a weekend getaway from the city traffic. Plus, rather than learning in a swimming pool you get to enjoy being out in the water the whole time - first in a shallow bay and then out on one of the actual dive sites.
More incentives: 1) it's a little cheaper than Dubai, 2) it would help out an area that got hurt by Cyclone Gonu, and 3) Hassan, the divemaster, has a really awesome personality.
