Yet another I-864? How many of these do I fill out?
My wife and I are now married and applying for a change of status. I came in
on the K-1 visa.
The INS website and everything else I've looked at says I need to submit the
I-864 Affidavit of Support... weird... I already did this when I got my K-1
visa stamped in Europe. Do I REALLY have to get my wife's sister to sponsor
us again???

You probably did I-134 to get the K-1.. I-864 is similar, but the I-864
has more legal teeth in it.

In all likelihood your sister-in-law completed an I-134 for you. Not many US Consulates require the I-864 for the K-1.
Yes, she will need to complete another one for you for the filing of your AOS. However, if your interview for the AOS is six months or more after your marriage and filing and you are working, you can "swap" your own I-864 at the time of the interview for hers so she is off the hook. Your wife needs to complete an I-864 as well and I'm assuming you know this. When you have your interview your wife can make out a new I-864 and you can complete the I-864A and add your income and submit it the day of your AOS interview.
