Use of maiden or married name?

Quick question. I am going to be getting married, then immediately file an I-130 form
at a consulate. There won't be time to change the name on my fiancee's passport. Will
the consulate/INS accept the married name as it appears on the marriage certificate,
even though the passport has the maiden name? Or do we have a choice of using either
the married or maiden name on the I-130 , G-325A , DS-230 and I-864 forms?

Yes

Yes
It is perfectly normal to either not change your last name at marriage, or to have a
passport in your maiden name when filing INS documentation in your new married name
if it is soon after getting married. As long as INS and the Consulate accept the
marriage documentation as valid for the I-130 filing, they will accept it as a valid
proof of the name change.

Slightly different perhaps, as we were already married,
but what we have done since we
first filed the I-130 (and on every subsequent form)
Is to put : Mrs P.......... (nee L........)
We certainly haven't had any problems by doing that.
