UK2USA2016 is an unknown quantity at this point
Default U.S. I129F processing centre

I was reading today that it depends on which state you are going to be living in to which processing centre the paperwork gets sent to, is this true or is it just random?

That has never been true. All I-129Fs get filed to the Texas lockbox. It has nothing to do with where you're going to live.

There are different addresses depending on if you use USPS or a courier like Fedex. But they are both in TX.

There other forms later on (I want to say N400 naturalization) that get sent to different places depending on your state of residence.
