When I file my Affidavit of Support forms is it ok if I have only
three years transcripts to send. Do I also need to have my W-2's for
the three years?

Hi,
I'm not sure where you are filing, but just in case it is London (or I believe the following applies elsewhere as well) You don't file the Affadavit, you take it with you to the interview.
At my I-130 spousal interview I took my US wifes: W2's, 1040's and her Maryland state tax returns.
The INS officer tossed aside the 1040's and Maryland returns saying
"I don't need these" and only kept her W2's

Would you by any chance know how long it takes for the complete process to be complete after the approval of I-130 by the Service Center.

It is very difficult to give timelines for this as after the approval of the I-130 at the INS Service Center, you then have to deal with the National Visa Center, and then the US Consulate. While it is possible to give some type of timeline for the NVC, it is almost impossible to give an adequate one for the US Consulate since so much depends on the country your spouse is from, etc.

Which AOS form?
For I-864, you only need W-2's if you filed a joint return.

Yes it is for I-864 and no I did not file joint returns for the past
year. It says that I need three years of tax returns and I ordered
transcripts from the INS for past three yeas and I am wondering if
that is good enough.

Dipty, I got my approval on September 12th and I got AOS bill from
them last week. Now I have heard that it usually takes three months
after the approval. I will keep you updated on my progress please you
do the same.
