Our AOS is filed under VWP. We wish to file a LLC here in the US, for doing tours of Scotland, in our joint names. Would Bryan's name on a corporate record voilate the application?

No. He can create an LLC. He cannot work for the business until he has his EAD in hand, though. But simply opening an LLC business will not affect his AOS.
