My fiancee and I have just petitioned for a K1 Visa. I am English and
she is American. I would like to go out and visit her for two months
before returning home and having my interview with the US consulate
and moving permanently once I have recived the K1.
Can anyone see any complications with this?

I visited twice while the K1 was being processed, neither time with any
issue, at the time it never occurred to me that there might be. But both
times on the waiver I had filled in length of stay and I was carrying a
return ticket.

you have a better chance than if you were in some other countries

Yes, there might be a very big complication for you. The agent at the POE might see in the database that you have a fiancee visa pending and decide you are too high a risk for entry and turn you around. The best scenario for a turn around is that it be voluntary on your part and not marked against you. The worse is that you don't go quietly and you incur a mark on your records.
If you are intent on doing this, do so with the full knowledge that you might not be allowed entry. Come armed with all the documentation you can that you have not abandonded your life in England, i.e. lease, bank statements, school registration, letter from employer that you are on holiday and will be returning to work on such and such a date.
