Default I-864 Confusion

We are gathering the required information for the i-864 and are confused, if anyone can help it would be greatly appreciated.

Background:

1. We both live abroad, my wife (sponsor) is working for a foreign company in the UAE but will quit in the next 3 months and return to the USA with our child
2. I (immigrant) am not currently employed
3. My wife has filed taxes (Married Separate) but is using the Foreign Earned Income Exclusion
4. I have significant liquid assets that can easily be sent to the USA (No Restrictions)

Can we just file 1 I-864 and use my assets in Section 7 to meet the requirements?

If the asset value is 3x the amount lacking in income for a family of 3, then yes.

Cash in the bank is the best asset.
