I have one of each.. do I use the I-134 or the I863.. or... both??

I-134, generally. However, you should do whatever the consulate asks
For at least one of these, neither form is required.
But, in general, I-134 for K-1.

Under what circumstances would you use a I-864 vs an I-134.
You say "whatever to consulate asks" .. are these forms filed with the
129-F application, or later when the spouse goes for his/her interview
with the consulate??
The I-864 asks for 3 years of tax returns... do they want the entire
return, or just the 1040?
The I-134 asks for supporting documentation "as appropriate" ... does
this mean you *must* supply these supporting docs?
The I-134 mentions needing a statement from bank officer.. is this a
free-form statement, just supplying the info?
The I-134 mentions a statement for employer on business stationary.. is
this also necessary, or do pay-stubs suffice?
The I-134 wants information about assets.. (stocks, life insurance, real
estate)... do they want supporting doc for that, too??

The circumstances are as Mr. Travel stated, go by what the US Consulate asks for. There are a few that demand the I-864 instead of the I-134 which is the affidavit of support normally used for the K-1 since the K-1 is a non-immigration visa. What your fiancee requires depends on where she is from.
As for the supporting document, you give what is asked for. For the I-864 it is all the documentation that is listed.
In the case of the I-134, it is an either/or document but people tend to give everything. If your income is sufficient then a letter from your employer and supporting paystubs is usually sufficient. In the case of the US Consulate in the UK you would be asked to provide tax returns. This requirement is listed on the checklist that the US Consulate sends to the fiancee prior to the K-1 interview scheduling and separate from the actual I-134 itself.
The bank letter required is just that a letter from the bank stating your name, address, account number and type, length of time the account(s) have been opened and balances. While the requirements state (been a while since I read the I-134/I-864) annual deposits, banks will not do the tallying so many people provide 12 months of bank statements. I will state that personally for ourselves at the time of the K-1 visa we used the I-134 and did not include bank statements or any statement that indicated the amount of annual deposits. My paycheck was and is direct deposit and I highlighted that on the paystub. We had no adverse feedback from the US Consulate for the K-1 nor the then INS at the time of adjustment of status.
You are already finding out there is no set procedure in documentation requirements for the K-1. You will quickly discover that this same inconsistency will follow you and your fiancee throughout the many years you will be dealing with the BCIS in the quest for her adjustment of status.
