I think my generation (Gen X) contains a few of the last people to stick things out for the good of their family. That was just the done thing previously.

Obviously if the job involves torturing people, being tortured, or selling snake oil... it might be advisable to leave.

I would tell your fiancee to stick out her job through the immigration process or at least find another one before she quits. Lots of people are unhappy in their jobs. In this economy and during your immigration process I would advise your fiancee to stick it out . Also even after you get your K1 approved you still need to fill out an I 864 affidavit of support for your AOS and she will need to be employed or at least have a joint sponsor for that as Rene said.
