R.e. financial sponsorship, your situation seems almost identical to mine. In our case, our cash balance was not high enough, we got my USC/US resident sister in law to be joint sponsor to save faffing around with proof of other assets etc.

Apart from the affidavit, all London wanted was the last three tax transcripts (i took the 2018 tax return, 2018 w2s (as she had filed jointly with her husband) and a couple of pay stubs just in case, but they didnt even take them off me let alone look at them). As long as your brother in law is good at keeping records then i would recommend this route.
