When you go to the embassy for the interview...do you just take original copies of everything including evidence or the originals and the copies of everything including birth certificates?

You go to the interview with originals of everything that was submitted as a copy. You also take originals of all the new documentation you are/will be submitting as well as copies of those originals. You will leave the copies with the examiner and you will take the originals home with you.
