Default can my fiance stay?

My fiance is here in the US (from Italy) on a tourist visa (B-2), and we plan to
marry within a few weeks. I am American. Her visa is good for two more months. After
our marriage, what are the procedures to take to change her non-immigrant status so
that she can stay? Can she stay while the petitions are being approved? Any info
about these circumstances much appreciated!

Yes, she can stay pending Adjustment of Status. go here

I should clarify that...she can stay IF you get married and file an I-130 spouse visa
and an I-485 AOS
