Here in Manitoba you only need a Safety (MOT) when the car is sold.
I've seen many cars were its only the Rust thats holding it together.

Yes, its the same in Saskatchewan as Manitoba. If you can see through the cracks in the windshield and it doesn't fall apart from the rust holes - you can drive it!!
I heard a story some years ago about how SGI (Saskatchewan Government Insurance) had a plan to ban people from driving farm trucks with cracked windshields. Then they found that all farm trucks had cracked windshields so they abandoned the idea.

one word of advice , if you have no claims bonuses for insurance contact your insurer and have them do you a letter detailing your no claims bonuses. you get 5% discount for every year you can prove you have no claims, up to a max of 40% i think . If you have had more than one insurer you will need a letter from each .
car insurance is mega expensve over here.

We only had a bill of sale and the little log book thingy SGI didn't ask for anything else when we bought the plates, is that something I should look into

I am pretty sure that SGI would not issue plates unless it had the history of the vehicle. My husband says that you don't need a safety check on a vehicle if its a Saskatchewan vehicle. But if the car has come from another province or its been totalled, there is a yellow sticker on the edge of the door showing its been through some kind of a safety check.

Not sure about Alberta, but if you sell your car in NS, they buyer has to pay tax on the purchase (can't get plates until they have). Tax on used cars, they don't miss a trick
