Now it seems like there have been copycat incidents at other stores. It all seems quite amateurish so probably not done for extortion but could be quite nasty all the same if you ended up with the piece of metal in your mouth.

Anarchist more like attempting to make their moronic life more interesting in a way they can affect without too much personal risk and maximum effect amplified thanks to our fear mongering media.
I've gone down to S0b3ys and theres bakery items outside the store totally unattended a target begging to be tampered with aisles full of warehouse trolly's stacked six foot high good hiding spot for their foul deeds they ( the retailers) need to get there house in order to protect us and more importantly for them their reputation and market share.

The news reports on the first COOP incidents described "push pins" being inserted into bakery items and something else - I can't remember either fruit/veg or cheese.
I'm not sure if they are releasing as many details now as the reports seem to be encouraging the copycats.

You have a point. I was in my local Sobey's yesterday and spotted the 'additional security' in the form of a thoroughly disinterested and slack-jawed middle-aged woman in a brown uniform, mouth-breathing near the fresh bread. It was only my incredible powers of self-control prevented me from shouting "Look!" and then quickly inserting foreign objects into the baguettes.
